Fortaleza
Fortaleza the capital of the State of Ceará is an important port and tourist center, and the fifth largest city in Brazil.
The city grew from Fort Schoonenborch, founded by the Dutch in 1649, at the mouth of the Pajeú River in Mucuripe Bay, when a few years later, in 1654, the fort fell to the Portuguese, who renamed it Fortress of Our Lady of the Assumption the seat of a captaincy.
Fortaleza is today famous throughout Brazil for its leather goods and textiles.

The Gastronomy in Fortaleza is typically Northeastern; is mainly based on fisheries, livestock and some agricultural crops.
From the fishing comes the lobster, the numerous varieties of fish, shrimp, crab and dishes such as fish, shrimp stew with garlic and oil, boiled crab, breaded skirt and crabcakes.
Of the agricultural production stand out sweet potatoes, coconut and corn, responsible for cakes, couscous, mungunzá, canjica, pamonha, pé-de-moleque and the own cooked or roasted corn. Beans and rice offer one of the most typical dishes of the region: "baião-de-dois" with butter and rennet cheese.
