Nice
Nice is France's fifth most populous city, after Paris, Marseille, Lyon and Toulouse, and is the capital of the Alpes Maritimes department, located on the southeastern coast of France in the Mediterranean Sea, being the second largest French city on the Mediterranean coast and second largest city in the Provence-Alpes-Côte d'Azur region after Marseille.
The town is called Nice la Belle (Nissa La Bella in Niçard), which means Good, the Beautiful, which is also the title of the unofficial anthem of Nice, written by Menica Rondelly in 1912.

Nice cuisine uses local landscape resources (olive oil, anchovies, fruit and vegetables), but also features from more remote regions, especially those in northern Europe, because of the ships that came to get olive oil to arrive full of food.
Nice has some local dishes. There is a local pie made with onion and anchovy sauce, with the name "pissaladière". "Socca" is a type of pancake made from chickpea flour.
"Farcis niçóis" is a dish made from vegetables stuffed with breadcrumbs, and the "niçoise" salad is a tomato salad with green peppers, boiled eggs, tuna or anchovies and olives.
The local meat comes from neighboring valleys, like the sheep of Sisteron. Local fish, such as mullet, sea urchin, sea urchins, and anchovies are used in large quantities, so much so that a proverb was born: "fish are born in the sea and die in the oil."
Of course, this refers to the olive oil made in the hills of Nice.
