turn the oven to medium heat to pre-heat it and pour the milk into the pot. Bring to a boil over medium heat, then add the vanilla.
Meanwhile, in a bowl, beat the eggs and, when the milk has boiled, remove from the heat and add them, together with the sugar, salt and nutmeg. always beating so that the mixture integrates.
then peel the bananas, cut them into small pieces, and mash them until you have a puree. then add it to the previous preparation, mixing well until it is homogeneous.
lightly butter and flour the mold. Pour the mixture, fill the water bath container with water up to 1/3 of its capacity, place the mold inside and place in the oven.
cook for about 50 min. or until you insert a needle and the needle comes out clean. remove, cool to room temperature and refrigerate for about 30 min. before unmolding and serving.

It can be served with chantilly cream.
