Preparation

Corn is very well trodden.
After stepping on hot water, stir.
Pass through a fine mesh strainer, squeezing well.
Bring a pot to the boil with the broth obtained, the sugar and the cinnamon to boil until it is pearl point, which takes + - 3 minutes of boiling.
Remove the pan from the heat and let it cool.
Mix the beaten eggs, stir and bring to a very low heat again, stirring constantly to thicken, but without boiling.
Remove the cinnamon stick.
Pour the cream into a bowl or individual bowls.
Serve fresh, sprinkled with a little powdered cinnamon.

* Corn can be frozen or canned, as long as it is tender.
