cut the meat into strips or squares into a medium size. if you cut the meat very small, it becomes dry and tough. Cut the tomatoes into small pieces to make 3 cups.

heat the oil over moderate heat. fry the onion in the oil for about 4 minutes. add the meat and garlic, and fry for another minute. Add the chili pepper, salt, oregano, pepper, and tomatoes. when it is boiling, cover the pot and lower the heat. cook for 15 minutes.

add the corn. bring to a boil, cover the pot and cook over low heat for another 10 minutes.

Serve with rice or cooked potatoes. garnish with parsley.
