cut the cleaned cod into slices of approx. 5 cm. thick. put the slices in boiling water, add salt, vinegar, bay leaf and peppercorns, bring to a boil again, remove from heat and let stand for 8 to 10 minutes covered. remove the foam from the broth before removing the slices.


You can also boil the whole cod. put it in cold water with the other ingredients and bring to a boil. boil for 3 minutes and let stand 10 to 15 minutes.
