Preparation

go through the mincer: the pork and veal, add the fat from the kidney cut without the cloth.
Chop the garlic and hot pepper in the mortar, then add the ground pepper, oregano, cumin, salt and a glass of white wine.
Mix everything with the meat and leave in this form to marinate for a day. after this fill in dry tripe like common sausages and cook roasting them on the grill or in the oven.
