Preparation

Prepare fresh curd by placing 2 liters of fresh curd in a cloth bag for approximately 24 hours, so that it is very dry and harder than usual. Add salt and mix well. Make smooth balls about 3 cm in diameter. Leave to dry on a dish towel for a few hours. Arrange the balls carefully, in a very clean preserving glass until filling. Cover with oil and cover tightly. If it is completely covered by oil and well closed, this dry curd in balls will keep for many months outside the refrigerator. Serve with olives, fresh mint and Arabic bread. We can put zahtar or Oregano.
