Bake and Shark is a traditional fast food dish from Trinidadian cuisine, prepared with fried flat bread, shark meat and additional ingredients. It is a classic street food dish that is sold at a multitude of food stalls and food stores throughout Trinidad and Tobago


Wash the shark meat with lemon juice and season well with chives, thyme, garlic, salt and hot sauce. beat in the seasoned flour and shake off the excess. Cool in batches in hot oil to prevent sticking. cook until golden brown. drain on kitchen paper to absorb all the fat. set aside warm to sew cakes. Sift separately the flour, salt and baking powder, add enough water to make a soft dough, knead for about 10 minutes. let it sit for half an hour or more. If you divide the dough into portions and roll it into balls, wrap each piece in a circle 5 to 6 inches in diameter and ¼ inch thick cold in hot oil until it puffs and floats, or overcook, when slightly brown and separated from the inside , the dough must be cooked. drain on kitchen paper. Open it still hot, and fill it with the fried shark, garnish with chopped lettuce and sauces of your choice (in the lusabor we put mustard, ketchup, mayonnaise, tamarind sauce and spicy for those who asked)
