Clean the mussels under running cold water, scraping the shells with a knife or scouring pad to remove all dirt. open them in a saucepan over the fire, with 1/2 cup of water and a bay leaf. remove them from the leaflets.

meanwhile, put the oil in a saucepan and brown the finely chopped onion and garlic, until they are transparent. add the tomato, wine, chopped parsley and paprika. stir, season and when the sauce is ready, add the mussels, sprinkle with the chopped parsley and serve immediately.
