Preparation

The potatoes are washed very well, without removing the skin and removing all the dirt.
The potatoes are placed in a cauldron together with the salt and a piece of lemon.
and we cover the potatoes with water without exceeding its level.
Once cooked, the water is removed and they are placed on the fire again, shaking them well until they dry (about two minutes approximately).
They are removed from the heat and left for a few minutes covered with a cloth.
Finally, they are served on a tray and the mojo is added on top.
