Preparation

This cow tajine has many spices. First of all you have to cut the meat into cubes. In the tajine add oil, bring to the heat, and let brown all sides of the meat cubes. Then add the onion, cut into small pieces, the crushed garlic, the tomato and the eggplant also in cubes.
Season everything with salt, pepper, cinnamon, cloves and curry. Drizzle the entire mixture with boiling water and cook over a white heat until the meat is tender.

Only then should you join the artichoke hearts and cut slices of lemon to put on top of the cooking. At the end, you can add coriander and serve this tajine with couscous if you wish.
