the pig must be lean and young to resemble the wild boar. it is known if it is young when the skin is easily torn when it is stretched.

chop up the pork; clean and wash it perfectly.

marinate the meat in vinegar for 8 days, seasoned with all the other ingredients indicated. after 8 days the pig will be ready, and will have the same taste of wild boar meat.

  • thyme, bay leaf,
  • basil, parsley, sage,
  • cilantro,
  • clover, peppermint, juniper berries,
  • green walnut bark,
  • nail
  • and pepper
