Preparation

Cut the chicken into eighths and fry it in the hot oil. Then in the same oil make a sauce with the onions, parsley. garlic, chili and tomatoes.

Add the broth and simmer for a few minutes until the chicken begins to soften.

Add the wine, salt, toasted saffron, cumin, pepper and the water from the peppers, petit pois and asparagus.

Bring it to a boil and add the washed rice. Cook for about 30 minutes over low heat or in the oven at 400 degrees F. for that same time or until the rice is tender.

  • 1 chicken of 1.5 kg.
  • 2/3 cup of oil.
  • 1/4 kg. of onions.
  • 1 sprig of parsley.
  • 1 large chili pepper.
  • 2 cloves of garlic
  • 12 small tomatoes.
  • 4 cups of chicken broth.
  • 1 cup of dry wine.
  • 2 tablespoons of salt, more or less.
  • 1/2 teaspoon of saffron.
  • 1/2 teaspoon of cumin.
  • 1/4 teaspoon of pepper.
  • 1/2 kg. of rice.
  • 1 can of bell peppers.
  • 1 bottle of petit pois.
  • 1 can of asparagus.
