Preparation

First we fry the chicken, then adding the salt, pepper and a pinch of Chinese cinnamon. then we add the chopped Chinese onion and the oyster sauce. we shouldn't cook it too much. remove from fire.

this filling is used at 1/2 teaspoon for each wonton dough. each of these masses is then folded inward on its sides. To glue them, we paint the ends with a little bit of yolk. finally we put them through a pot with abundant boiling oil, for a short time.
