oven 350 degrees.
grease a 13 x 9 x 2 baking dish. fry the bananas to make the slices, dry them well with a paper towel and then chop them. in a pan with butter, cook the onion.

Separately, in a bowl, beat the egg, cream, chives, parsley, salt and pepper. add the slices and cheese, mix well and pour into the prepared pan.

bake until set approximately 35 minutes. the frittata can be made from the day before.

  • 4 tablespoons chopped onion
  • 3 tablespoons chives, chopped

  • 1 emus egg (equivalent to 10 chicken eggs)
  • 1/2 cup whipping cream
  • 3 tablespoons minced parsley
  • 1 teaspoon salt
  • 1/4 teaspoon ground peppercorns
  • 10 slices of ripe banana, chopped
  • 1 cup of country cheese grated
